For defensive use and/or carry, I would have to say either the Les Baer SRP in Bear Coat, which I own and I have to say is my favorite 1911. Following that, based on all I have researched, I have to say the Wilson Combat CQB would be my second choice. Springfield PRO is also excellent.

For a range gun, the Les Baer Premier II would get my nod which I personally own, followed by the SW1911 Performance Center Melonite which I also own. Both are excellent production/semi-custom 1911s.
